Chia seed is a well-known superfood and is an excellent source of fiber and omega-3 fatty acids. Not only is chia a superfood, but because it expands in the belly, causing a greater sense of satiety than most foods, it’s a great ingredient to add into your diet to encourage weight loss. Â
This recipe makes an excellent dessert or breakfast alternative!Â
Ingredients:Â (use organic when possible)
• I cup Almond Milk (or other nut milk)
• I cup Yogurt (or canned coconut milk – thick)
• 3 tbsp. Maple Syrup
• I tsp Vanilla
• ¼ cup Chia Seeds
• I tbsp. raw cacao (or cocoa powder) – Optional
• ½ cup of special extras: choc chips, dates, chopped nuts, seeds or fresh chopped berries or fruit
Directions:
In a mason jar, cup or bowl, add all the ingredients except the ‘special extras’. Mix thoroughly with a spoon or add a lid to a mason jar and shake. You will need to let the mixture sit and soak for at least 1 hour or longer if in the fridge. Periodically stir, since seeds will settle to the bottom.
After 1 hour, the chia seeds should have absorbed the liquid and you will have a thick pudding. At this point add some of your favorite extras like blueberries, strawberries, bananas, seeds, nuts or dates. Enjoy!Â
As an additional step, after making your pudding, warm it gently and eat as a hearty, morning, breakfast bowl.
