Ingredients: (use organic when possible)
• 1/2 head red cabbage
• 2 large carrots
• 3 Tbl raw agave or honey
• 2 Tbl Veganaise (or another healthy mayo substitute)
• 1/3 cup olive oil
• 3 Tbl apple cider vinegar
• 1 Tbl fresh dill ( chopped)
• 1 Tbl stoneground mustard
• ½ Tsp sea salt
• ½ Tsp black pepper
Dice up the cabbage with a knife into small bite-size pieces. Grate the carrots with a cheese grater. Mix all the ingredients together and let sit for 15 min. Serve fresh or put in the fridge and have later. (lasts 2-3 days)
• Replace the dill or top off with fresh herbs you prefer, like cilantro, parsley or basil.
